Dialer > simple dialer, emerald dialer
Gallery > simple gallery
Mail > k9 mail, fair email
News > flym, handy news reader
File explorer > material files, simple file manager
In general I think the basic system apps (contacts, gallery, calendar, dialer, etc.) can be replaced quite well with simplemobiletools (https://www.simplemobiletools.com/).
